VOIP For Beginners?

We have a handful of people who would like to use Skype (simply as that's what the other end are using) or some sort of VOIP to save money on their overseas calls. Let's assume (rightly or wrongly as it seems up for debate) that Skype isn't really "enterprise friendly" with regards to things like application aware firewalls, and that we're not comfortable with the p2p element. Also let's ignore any existing analogue phone system that we already have as it's ancient. What are the basic options assuming a headset/mic and a softphone please? I've been doing some Googling and I'm simply not clear how all these different standards interact with one another? To be clear, I'm not thinking of something that could replace our existing phone system as that's not my area, I'm just wondering what the options are when faced with a chap half way around the world who'd like to use Skype for a phone call etc. We do have a public DMZ and I'm open to the thought of having something in there that can do whatever it likes connection-wise, it's just the LAN/P2P and seeming lack of full control with Skype that worries me, rightly or wrongly.
